The Devil You Know

This week (apparently I'm posting weekly now. Hm) on What the Fork:

The devil you know might beat the devil you don't, but the devil you don't tastes better.

Check it out.

I have such a problem with hard-boiled eggs in general, deviled eggs in particular - they're so tasty and so dense, you put away a few of them before you realize you've eaten the equivalent of two omelets worth of protein if the omelets were slathered in MAYO.

Heh, eggs dressed with eggs. I still like them simple. No bacon in my deviled eggs! Bacon makes 'em chewy.

True. Bacon makes 'em chewy.

That in there? That's pastrami. :)

Does fried pastrami not get chewy? Most of the people I know who add meat to their deviled eggs use bacon, at which I am very much "meh". I like them simple, with capers and minced sweet gherkins and sweet onion. Don't even like scallions. :P

I cook the pastrami in butter. It crisps right up, and it's thinner than bacon so it doesn't fight as much.
